Pancakes for fussy eaters? Yes please! 🥞💚
At CAH, we love finding simple ways to build nutrition into everyday favourites. Here’s a go-to idea (that may not work for every child, but can be a helpful option to try!):
✨ Power Pancakes ✨
Using a basic pancake mix (the packet kind is totally fine!), just add:
🥛 Milk
🥚 Egg
🥑 Mashed avocado (for healthy fats and a creamy texture)
🥒 Very finely grated (almost obliterated!) zucchini
Optional extra:
🧀 A tablespoon of ricotta cheese (if preferred)
Mix it all together (a stick blender is ideal!) and cook as usual. The zucchini and avocado blend right in, creating a smooth, consistent texture. The pancakes turn out soft and fluffy - great for kids who prefer predictable colour and texture.
👩👧 This is actually a trick our very own director uses with her kids at home!
